To be honest with you, I barely eat on Thanksgiving night. It may sound weird, but as much as I love food I get full easily, who would have thought?
I make sure I save some food for the next day, am I greedy? Yes, and that’s ok!

One of my first lessons in culinary school included exactly this: how to make perfect mashed potatoes, Oh man! Making mashed potatoes sounded like art to me back then, and still does. There’s nothing better than creamy and buttery mashed potatoes.
I kind of have a pet peeve when it comes to mashed potatoes and mangu (a traditional Dominican dish) If it is not properly seasoned (meaning it does not have enough salt) if it does not have enough butter, I DONT WANT IT, I REPEAT I DONT WANT IT. Thank you Next!

- Mashed Potatoes
- All-purpose flour
- Cheddar cheese
For the breading
- All-purpose flour
The method at a glance
- Preheat oven at 350 Fahrenheit.
- In a large bowl, add mashed potatoes, all-purpose flour, and eggs. Mix well.
- Using a spoon take some of the mashed potatoes flatten. Place a cube of cheddar cheese in the center and wrap the potato mixture around the cheese. Repeat.
- In three separate bowls, add flour, eggs (whisked) and breadcrumbs.
- Coat the potato ball in flour, then egg, then breadcrumbs.
- Place in a sheet pan and bake for about 25 minutes.
