What better way to enjoy this season than with marvelous people and incredible food? Like this Roast Chicken with Lemon and Herbs Butter. It does not get better than that if you ask me.
I first made this recipe for Thanksgiving, and I couldn’t be happier with the results, I am obsessed with this lemon and herbs butter, It is perfect with almost everything, fish, vegetables and even bread. Believe me, I already tried it for both of us (don’t judge me). Now let me tell you about my current obsession this Roast Chicken with Lemon and Herbs Butter recipe.
Before making this recipe there are a few things to consider:
To achieve better results, do not remove the chicken skin; I say this because I know there are people who like to remove it. No worries! I am not judging you, It’s all good in the neighborhood! All jokes aside, skin is important because it retains moisture. That is exactly what we want, we want our chicken to be juicy and moist. Nobody likes dry chicken, well I hope you don’t.
I seasoned my chicken with kosher salt and pepper, but I also made a mixture of garlic, freshly ground pepper and sea salt. Why? Well, you should always season your meat, everything should work in perfect harmony. Although this lemon and herbs butter is going to give that amazing lemony flavor, as I mentioned you also want your meat to be well seasoned.
Before seasoning your chicken; You need to separate the skin from the meat, by using your fingers. We are going to spread the garlic, sea salt, pepper mixture and the lemon and herb butter under the skin on the breast and upper leg meat. The butter is going to make the skin extra crispy. Take a halved lemon and insert it into the chicken cavity as well.
Trussing the chicken is also a way to retain moisture. This method also gives the chicken a compact shape and it helps it cook evenly. I love it!
Finally, after we season and truss the chicken, it’s ready to be placed in the oven. We already spoke about retaining moisture, however, placing the chicken in a rack on a sheet pan also helps. The internal temperature for cooked chicken should be 165° Fahrenheit. You need a thermometer to measure the internal temperature. One last thing before you run to the kitchen to make this Roast Chicken with Lemon and Herbs Butter (I love saying this), the meat needs to rest for at least 10 minutes before you cut it.

Roast Chicken with Lemon and Herbs Butter
Delicious Roast Chicken with Lemon and Herbs Butter. This is the perfect recipe for the holidays.

- 1 whole roaster chicken
- 1/2 cup lemon and herbs butter
- 1 lemon halved
- Kosher salt and pepper
- For the seasoning:
- 3 garlic cloves
- 1/4 teaspoon sea salt
- Kitchen twine
- Mortar and pestle
- Step 1 Preheat oven at 375°F.
- Step 2 Pat dry the chicken.
- Step 3 Grind the garlic, sea salt, and pepper in a mortar.
- Step 4 Sprinkle main cavity of chicken with salt and pepper
- Step 5 Slide fingers under skin of breast and upper part of legs, loosening skin. Spread the garlic,sea salt and pepper mixture and the lemon and herbs butter under the skin. Sprinkle the chicken again with kosher salt and pepper. Insert the halved lemon into the chicken cavity.
- Step 6 Truss the chicken and place chicken on rack in large roasting pan.
- Step 7 Roast chicken uncover for an 1hr 30m.
