I can’t believe it’s 2019. Time is going by so fast. What better way to start this amazing year than with this Spring Mix Salad Recipe.
This is a new year and a new opportunity arises to be the best version of you. This year is going to be amazing!
I went crazy during the holidays. We had a lot of Pernil (Pernil is a slow-roasted marinated pork leg or pork shoulder) and by we, I mean my family and me, there was a lot of lasagna and desserts. I had a great Christmas vacation, and not just because of the food, even though it sounds like it. I hope you had a great time.
Now let’s get down to the nitty-gritty, Yes! you are right! This Spring Mix Salad Recipe. I know that’s why you are here for.
This salad recipe is amazing, and it has the following ingredients:
- Spring Mix
- Kalamata Olives
- Cherry tomatoes
- Feta cheese
I love Feta cheese, it is so creamy, salty and delicious. I am also a fan of Kalamata olives, but my all-time favorite is the cucumber.
For the Dijon Mustard Style Vinaigrette, I used:
- Dijon Style Mustard
- White Vinegar
- Canola Oil
Remember this delicious Mango Vinaigrette ? I mentioned in that post about the 3 to 1 rule when making a vinaigrette. Well, it is convenient to know this when you are first starting your cooking journey, however, on some occasions (this one in particular) rules are meant to be broken. As you get comfortable in the kitchen you figure out what works for you and what does not. Adjusting the flavor of a dish is a must. You need to taste everything, and if you feel something is missing, follow that instinct and adjust the seasoning.
This salad is so good that I want to stop writing and jump to the kitchen and make it again. You guys should know me by now. I get obsessed with new recipes. This salad has become my family’s favorite. I love the freshness of this Spring Mix Salad.
I had a lot of good instructors while in culinary school but one in particular taught us how to properly dress a salad. Yes, that is a thing, but don’t worry I’ll teach you (I care for you) 🙂
There are many ways to dress a salad. One of the ways you can do it is to drizzle the vinaigrette or oil around the lettuce and then toss it. I know this may sound silly, but drizzling the vinaigrette around instead of pouring on top of the lettuce makes a difference. Another thing to consider is not to add a lot of dressing, the salad is supposed to be lightly covered with the vinaigrette not drenched.
I made a Dijon Style Mustard Vinaigrette. However, I noticed that it became bitter after adding the olive oil. This happened because I over beat the olive oil, therefore I recommend using canola or vegetable oil.
Another thing to consider when making a vinaigrette is to add the oil gradually, this way we emulsify it. The vinaigrette is going to separate eventually, for that reason you should always whisk the vinaigrette before serving it.

Spring Mix Salad Recipe
Delicious Spring Mix Salad with Dijon Style Mustard Vinaigrette.

- 7 ounces spring mix salad
- 1 cucumber diced
- 1 pint cherry tomatoes halved
- 1 can kalamata olives halved
- 1/2 cup feta cheese crumbled
- For the Dijon Mustard Vinaigrette:
- 1 tablespoon dijon style mustard
- 1/4 cup white vinegar
- 2 tablespoons honey
- 1 shallot minced
- 4 oz canola or vegetable oil
- kosher salt
- freshly ground pepper
- Step 1 For the Vinaigrette: combine the mustard, vinegar, honey, and shallot. Whisk until well combined. Season with salt and pepper, add the Canola or Vegetable oil gradually, whisking constantly.
- Step 2 Place the greens and the rest of the ingredients in a bowl, drizzle some of the vinaigrette on the edges of the bowl and toss.
