Can we all say T-A-S-T-Y together? No? Ok, I’ll say it for you because this is the perfect word to describe this Breaded Chicken with Green Sauce.

Alright? Good.

I took a week off from blogging because I have been all over the place lately. Blogging is my passion. I love taking pictures and sharing some insights with you guys. Blogging is not a full-time thing yet (raises her hands to God asking for just that) I hope one day it turns to be exactly what I want (I am grateful regardless).

Ok! That being said, let’s get cooking. Shall we?

So, let’s talk about Standard Breading.

What is Standard Breading?

Standard breading is prepared by coating foods with flour, egg wash, and bread crumbs.

Why do we use Standard Breading?

We use standard breading to create a crisp crust on fried (in this case baked) food.

A few things to consider:

Before coating the meat make sure it is properly seasoned.

Use flour or similar meal or powders, such as cornstarch, to lightly dredge foods before dipping it in the egg wash.

Make an egg wash by blending eggs with water or milk. Use 2 oz fluid ounces of water or whole milk for every two whole eggs.

Note: Please discard any leftover flour, bread crumbs, or egg wash once you are done to avoid cross-contamination.

Standard Breading method setup:

  • First tray with all-purpose Flour.
  • Second tray with egg wash.
  • Third tray with bread crumbs.

Ingredient list and Method at a Glance:

What do you need to make this Breaded Chicken with Green Sauce?

  • Chicken Cutlet
  • Dried Oregano (toasted)
  • Kosher Salt
  • Freshly Ground Pepper
  • All-Purpose Flour
  • Egg Wash (Whole eggs beaten with water)
  • Bread Crumbs
  • Olive oil or cooking spray (to coat baking sheet pan)

Note: Toasting the oregano helps intensify its flavor. Keep a close eye on it (you do not want it to burn).

For the Green Sauce:

  • Sour Cream
  • Spinach
  • Parsley
  • Garlic
  • Red Pepper Flakes
  • Lemon Juice + Zest
  • Kosher Salt
  • Freshly Ground Pepper

Note: This recipe makes about 6 oz (3/4 cup)

This Green Sauce is perfect, delicious and creamy. I tried it with these Cheese Empanadas and I was not disappointed.

The Method at a Glance:

  1. Preheat oven at 350 degrees Fahrenheit.
  2. Toast dried Oregano at low-medium heat on a small frying pan for 1 or 2 minutes (until fragrant).
  3. Pat dry chicken and season each side with salt and pepper.
  4. Dip chicken in flour. Make sure each side is fully covered and shake off any excess.
  5. Then dip chicken in egg wash.
  6. Finally, dip chicken in bread crumbs. Make sure to shake off any excess.
  7. Place chicken on the sheet pan (make sure you coat the sheet pan with olive oil or cooking spray)
  8. Place the chicken in the oven. Cook for 20 to 25 minutes.

While the chicken is cooking in the oven, you can make the Green Sauce.

For the Green Sauce:

In a blender container place:

  • Sour Cream
  • Spinach
  • Parsley
  • Garlic
  • Red Pepper Flakes
  • Lemon Juice + Zest
  • Kosher Salt
  • Freshly Ground Pepper

Blend all the ingredients until you achieve a creamy consistency. Taste and adjust seasoning if necessary.

Set sauce aside until ready to use.

Note: Serve this FLAVORSOME Breaded Chicken with Green Sauce with your favorite side salad.

Flavorsome Breaded Chicken with a tasty Green Sauce. Made with Sour Cream, Spinach, Parsley, Lemon Juice and Zest, Red Pepper Flakes and other ingredients.

Ingredients
  • For the Chicken:
  • 4 boneless chicken cutlets
  • 1 teaspoon dried oregano
  • Kosher salt
  • Freshly ground pepper
  • 1 cup all-purpose flour
  • 1 cup plain bread crumbs
  • 2 eggs plus 2 oz water (beaten)
  • Olive oil or cooking spray to coat the sheet pan.
  • For the green sauce:
  • 1/2 cup sour cream
  • 2 oz baby spinach
  • 2 oz parsley
  • 2 garlic cloves
  • 1 teaspoon red pepper flakes
  • 2 teaspoon lemon juice plus the zest of half a lemon
  • Kosher salt
  • Freshly ground pepper
Directions
  • Step 1 Preheat oven at 350 degrees Fahrenheit.
  • Step 2 Toast dried oregano on a small frying pan for about 1 or 2 minutes or until fragrant.
  • Step 3 Pat dry chicken with a paper towel.
  • Step 4 Season chicken cutlet with salt, pepper and dried oregano on each side.
  • Step 5 Dip each chicken cutlet on all-purpose flour making sure it is completely covered and shaking off any excess.
  • Step 6 Dip each chicken cutlet on the egg wash.
  • Step 7 Dip each chicken cutlet in bread crumbs. Shake off any excess.
  • Step 8 Place chicken on the sheet pan.
  • Step 9 Place in the oven.
  • Step 10 For the green sauce:
  • Step 11 In a blender container: place the sour cream, spinach, parsley, garlic, red pepper flakes, lemon juice plus zest, season with salt and pepper. Blend until a creamy consistency is achieved.
  • Step 12 Set sauce aside until ready to use.
  • Step 13 Note: Serve Breaded Chicken with Green Sauce with your favorite Side Salad or favorite side.
  • Step 14 Garnish with Red Pepper Flakes for an extra hint of spice.
