This tart was a winner among my friends and family, I mean I cannot begin to tell you how scrumptious it is. Crispy kale, sweet butternut squash, caramelized onions, and the eggs, make this tart a perfect breakfast or brunch recipe. 

This Butternut Squash Tart is going to change the way you brunch!

Puff pastry

What is puff pastry?

Puff pastry is a flaky and delicious pastry that can be used in savory or sweet recipes.

If you have been reading this blog for a while, you know that my mom is the reason why I went to culinary school and fell in love with cooking. My mom used to spend hours in the kitchen making bread, and obviously other delicious recipes that included puff pastry. 

I did not bother much to learn how to make puff pastry until I was in culinary school. I was a bit intimidated at first, but hey! I got it done.

I won’t lie and say making puff pastry is my favorite thing in the world, so I used store-bought for this recipe, and it is just as great.

To clarify,  making puff pastry is not hard, but I really wanted to keep this recipe simple.

If you are in a rush and want to make it simple, store-bought is best.

What do you need to make this recipe?

  • Puff pastry
  • Butternut squash
  • Kale
  • Red onion
  • Garlic
  • Parmesan cheese
  • Unsalted butter
  • Eggs
  • All-purpose flour for dusting.
  • Kosher salt
  • Freshly ground pepper

The Method at a Glance:

  1. Preheat oven at 375 degrees Fahrenheit.
  2. Melt butter at low heat and add garlic, salt, and pepper.
  3. Cover sheet pan with parchment paper.
  4. Dust table with all-purpose flour.
  5. Roll out dough and place on the sheet pan.
  6. Cover puff pastry with egg wash.
  7. Cover puff pastry with garlic butter.
  8. Add the butternut squash and onions.
  9. Place the eggs.
  10. Add the Kale.
  11. Season with kosher salt and freshly ground pepper.
  12. Finish with parmesan cheese.
  13. Place in the oven for 25 to 30 minutes.

  • 1 sheet puff pastry (thawed if frozen)
  • 15 oz butternut squash chopped
  • Chopped Kale
  • 1 large onion sliced
  • 3 garlic cloves grated
  • 4 tbsp unsalted butter
  • Parmesan cheese
  • 6 whole eggs
  • 1 egg for egg wash
  • Water
  • All-purpose flour for dusting
  • Kosher salt
  • Freshly ground pepper
Directions
  • Step 1 Preheat oven at 375 degrees Fahrenheit.
  • Step 2 Melt butter at low heat and add grated garlic, salt, and pepper.
  • Step 3 cover sheet pan with parchment paper.
  • Step 4 Dust table with all-purpose flour.
  • Step 5 Roll out dough and place on the sheet pan.
  • Step 6 Cover puff pastry with egg wash (a combination of egg and water).
  • Step 7 Cover puff pastry with garlic butter.
  • Step 8 Add the butternut squash and onions.
  • Step 9 Place the eggs.
  • Step 10 Add the kale.
  • Step 11 Season with kosher salt and freshly ground pepper.
  • Step 12 Finish with parm cheese.
  • Step 13 Place in the oven for 30 minutes.
