  • Heavy Cream

Making this recipe is super easy. 

The Method at a Glance:

  • First, melt unsalted butter on a cast iron or regular skillet.
  • Second, add Chicken tighs skin side first to achieve the desired crispiness. 
  • Third, sear chicken and remove from the skillet and place it on the wire rack. 
  • Fourth, get rid of the excess fat on the cast-iron skillet. 
  • Fifth, add butter and cook the onion, carrot, garlic, and oregano — season with salt and pepper to taste.
  • Sixth, add whiskey and let it reduce by half.
  • Seventh, add the heavy cream. 
  • Eighth, add the chicken thighs and cook at medium/low heat uncovered for about 40 minutes.

This Cast Iron Chicken Skillet recipe is an amazing lunch or dinner option. Crispy chicken thighs with a creamy carrot, onion and garlic sauce.

Ingredients
  • 6 in bone chicken thighs
  • 1 onion thinly sliced
  • 1 large carrot sliced
  • 3 garlic cloves minced
  • 1 teaspoon dried oregano
  • 3 tbsp unsalted butter
  • 1 cup heavy cream
  • 3 oz whiskey
  • Kosher salt
  • freshly ground pepper
Directions
  • Step 1 Dry the chicken thighs with a paper towel — season with kosher salt and freshly ground pepper.
  • Step 2 In a cast-iron skillet at medium-high heat melt 2 tbsp of unsalted butter (reserve 1 tbsp of the butter for later use)
  • Step 3 Cook chicken thigh (skin side first) about 3 minutes per side.
  • Step 4 Remove the chicken thighs and place them in a cooling rack.
  • Step 5 Get rid of the fat left in the pan. Wipe the pan with a clean paper towel.
  • Step 6 Add 1 tbsp of unsalted butter and cook the onion, carrots.
  • Step 7 Add garlic and oregano at medium-low heat. Add a bit more salt and fresh ground pepper.
  • Step 8 Add the whiskey and let it reduce by half.
  • Step 9 Add the heavy cream.
  • Step 10 Add the chicken.
  • Step 11 Let it cook at medium-low heat for 40 minutes uncovered or until the sauce reduces by half.
  • Step 12 Taste and adjust seasoning.
