Let’s keep this real ok? This is the best salmon recipe you could ever try, PERIOD!

Salmon is the best option when you are not sure what to make for lunch or dinner.

What do you need to make this Coconut Salmon Recipe?

  • Salmon
  • Bell peppers
  • Onion
  • Garlic
  • Coconut milk
  • Paprika
  • Adobo or any other all-purpose seasoning 
  • Dried oregano
  • Kosher salt
  • Pepper

How to make coconut sauce?

  • First Step: Season the salmon with salt, paprika, freshly ground pepper, and adobo or all-purpose seasoning.
  • Second Step: In a skillet, add olive oil and cook the salmon the skin side first. Sear the salmon for a few minutes (about 3 minutes per side) Remove from the skillet and set aside.
  • Third step: On the same skillet add the onion, bell peppers, and cook for about 3 minutes, add the garlic.
  • Fourth Step: Season with salt, pepper, and adobo. Taste.
  • Fifth Step: Add the coconut milk.
  • Finally: Add the salmon and let it reduced by half.

Notes: Some coconut milk brands will change color.

If you want crispy skin, I recommend using two skillets, one to cook the salmon and one to cook the sauce. Once the salmon is ready just pour some of the sauce on top. Do not forget to cook the skin side first (ALWAYS).

This Coconut Salmon recipe is simple yet delicious. That is exactly what my lazy self aims for when cooking (sorry, not sorry).

This is the best Coconut Salmon recipe. Perfectly cooked salmon in a creamy coconut sauce.


  • 2 lb salmon
  • Half yellow bell pepper julienned
  • Half orange bell pepper julienned
  • Half red bell pepper julienned
  • Half green bell pepper julienned
  • 1 onion sliced
  • 4 garlic cloves minced
  • 1 teaspoon all-purpose seasoning
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Kosher salt
  • Freshly ground pepper
  • Olive oil
  • Step 1 Season the salmon with all-purpose seasoning, paprika, dried oregano, salt, and pepper.
  • Step 2 Heat olive oil in a cast-iron skillet, cook salmon for about 3 minutes per side. Set aside.
  • Step 3 On the same skillet, add more olive oil, bell peppers, onion, cook for about 3 minutes.
  • Step 4 Add garlic, and cook for about two more minutes.
  • Step 5 Add coconut milk—season with salt and pepper.
  • Step 6 Add salmon.
  • Step 7 Let the sauce reduce the sauce by half.
  • Step 8 Serve and enjoy!
