Pumpkin Soup

It is Pumpkin season ya’ll.

This is the best pumpkin soup EVER! I mean it.

Pumpkin season it’s my favorite. I made this recipe a couple of months ago while I was on vacation in the Dominican Republic. It was my neighbor’s favorite for sure! People kept asking me how I made this CREAMY, DELICIOUS, and, INCREDIBLE soup, so I had to repeat myself a couple of times and give the recipe to those who asked me. I was not complaining; I was flattered actually. Several years ago my mom made a similar recipe. I cannot remember all the ingredients she used. However, I do remember how delicious it was. This recipe brought back my childhood memories.

I made this soup weekly over the summer; this is how you know how much I love it. I became obsessed (as per usual.) Imagine soup that you can eat hot or cold this is it. I am thrilled for you to try it. I know you are going to love it as much as I do. You see, we have a lot of things in common by now. We are buddies.

I recommend using fresh pumpkins. I know it is a bit challenging to cut and peel a pumpkin which is what I did here, but some people cut it into chunks and boil it with the skin. Then they scoop out the meat.

For this recipe, you need a blender or food processor.

Can you turn this into a vegan soup? The answer is yes!

Substitute the chicken stock with vegetable stock (make sure you use the unsalted stock) and do not add the heavy cream.

Turmeric is the star of the show. It goes perfectly with this soup. It has a strong and pungent flavor, and it could also stain your cookware, yikes! Finally… if I were you, I wouldn’t prevent myself from tasting this SCRUMPTIOUS soup.

Pumpkin Soup

  • 2 Pounds fresh peeled and diced pumpkin
  • 1 white onion julienned
  • 1 yellow bell pepper julienned
  • 1 garlic clove crushed
  • 1 teaspoon dried thyme
  • 2 tablespoons dried turmeric
  • 2 tablespoons salted butter
  • 3 cups unsalted chicken stock
  • 1 cup heavy cream
  • salt and pepper
  • Step 1 In a pot melt butter and add the onion, bell pepper, garlic, thyme, turmeric and pumpkin, salt and pepper. Let it cook in medium/high heat until onion becomes translucent.
  • Step 2 Add chicken stock and let it simmer uncovered for about 15 minutes.
  • Step 3 Carefully pour the soup into a blender or food processor container and blend.
  • Step 4 Transfer the soup into the same pot and add the heavy cream.
