While I was on vacation in the Dominican Republic. I visited various places. I was invited to a party at my mom friends house. There were many appetizers including baba ganoush, hummus, and sun-dried tomatoes (my favorite).
The sun-dried tomatoes immediately caught my attention this was the first time I tried sun-dried tomatoes. I loved that it was so simple but yet so flavorful. One of the attendees brought all of these amazing treats for us to enjoy. She uses a food dehydrator to dry the tomatoes. People loved it at the party. I was not the exception, and this alone inspired this recipe.
I love being a good hostess, and this is a great Recipe to share with friends when they come over to visit. Imagine having this ready in the refrigerator, and just having to toast some bread, or boil the pasta, or better yet, make an arugula/Caprese Salad, why not? The possibilities are endless. It would only take a few minutes to be ready.
There are different ways to make dry tomatoes. You can place them in a sheet pan, add salt for flavor and let them dry in sunlight for a few days. You can also put the tomatoes in the oven and let them dry for about 4 hours at 300 Fahrenheit. You can also use a food dehydrator; you can buy it from Amazon, there are different brands, sizes, etc. If you do not want to make the tomatoes from scratch, you can buy it at the supermarket.
This recipe is one of my favorites. I think it would be a perfect gift for a neighbor or friend who loves mozzarella and dried tomatoes, as much as you.
