It is still Summer, I repeat: IT IS STILL SUMMER!!!!
We still have a few more days of summer left, and to be honest I am not ready for The Fall.
In my humble opinion, vacations are always too short. I went to DR for 4 weeks (it is never enough).
I made some awesome recipes over there and this is one of them.
And since I am not ready for Fall I’ll just make myself believe I am back in the Dominican Republic drinking some fresh coconut water.
Ok! Let me stop. I won’t torture myself anymore. You are here because you want to know about this full-flavored Chicken Salad Recipe right? Keep reading my friend.
What do you need to make this Chicken Salad?
- Boneless Chicken Breast
- Adobo seasoning
- Green Bell Pepper
- Yellow Bell Pepper
- Red Onion
- Plum Tomatoes
- Pitted Green Olives
- Fresh Cilantro
- White Vinegar
- Lime Juice
- Mild Chunky Salsa
- Kosher Salt
- Freshly Ground Pepper
The Method at a glance:
- Season chicken breast with grated garlic, adobo seasoning, kosher salt, and freshly ground pepper.
- Boil chicken breast until fully cooked. Shred and set aside.
- In a large bowl add shredded chicken breast, bell peppers, chopped onions, chopped tomatoes, olives, fresh cilantro, vinegar, lime juice, and chunky salsa.
- Mix well all ingredients.
- Adjust seasoning, and place in the fridge until ready to serve.
Note: You can make the salad ahead, place the salad in the fridge overnight and serve it the next day.
So, I recommend you serve this salad with some delicious brown or white rice (I know… carbs!!!!) But a bit of carbs never hurt anybody. You can also enjoy this Chicken Salad with some crispy and scrumptious tostones (fried plantain) the Dominican in me is screaming!!!!
