Let me tell you, friend, that this Zucchini Lasagna is the bomb.com. Too much of this Zucchini Lasagna is totally OK!

As many of you may know, I have decided to start the keto diet. I am very pleased with the results so far. The Keto diet (lifestyle) is working wonders for me. However, this does not mean that I’ll only post Keto friendly recipes. For the time being and as my journey starts, I want to share Keto recipes with y’all, but I’ll also post regular recipes eventually (please bear with me).

As I mentioned before on my previous post, Low-carb or Keto does not mean boring. I know for sure you are going to love this Zucchini Lasagna as much as me (and my family).

I’ve tried this recipe multiple times. I first made it during the Christmas break, my family ate this almost every weekend. Everyone was happy (like really happy).

What do you need to make this Keto friendly lasagna?

  • Zucchini
  • Ground turkey
  • Onion
  • Bell pepper
  • Garlic
  • Dried oregano
  • Parsley  and extra for garnish
  • Sugar-free tomato sauce
  • Heavy cream
  • Parmesan cheese and extra for garnish
  • Olive oil
  • Kosher Salt
  • Freshly ground pepper

The method at a glance:

  1. Preheat oven at 375 degrees Fahrenheit.
  2. Slice Zucchini lengthwise, season with salt and place on a rimmed sheet pan.
  3. Place Zucchinis in the oven for about 10 minutes. Set aside. Note: We do this to drain as much water as possible from the Zucchini.
  4. Heat Olive oil on a pot.
  5. Add onion, bell pepper, minced garlic, dried oregano, and ground turkey.
  6. Let it cook for about 3-5 minutes.
  7. Add tomato sauce. Let simmer for about 5 minutes.
  8. Lastly, adjust seasoning.

For the White sauce:

  1. Heat heavy cream on a pot.
  2. Add minced Garlic
  3. Add chopped parsley
  4. Finish sauce with grated Parmesan cheese.
  5. Adjust seasoning.

Assemble Lasagna and place in the oven for 45 minutes.

Tip: When making sauces it is important to add salt gradually. Always remember a sauce will develop its flavor as it simmers.

This is a delicious Keto friendly Zucchini Lasagna.


  • 2 lb zucchini, cut lengthwise
  • For the red sauce:
  • 1 lb ground turkey
  • 1 onion small diced
  • 1 bell pepper small diced
  • 3 garlic cloves minced
  • 1 teaspoon dried oregano
  • 1 tablespoon extra virgin olive oil
  • 1 cup sugar-free tomato sauce
  • Kosher Salt
  • Freshly ground pepper
  • For the white sauce:
  • 2 cups heavy cream (avoid using light heavy cream if you are on Keto)
  • 1/4 cup chopped parsley plus extra for garnish
  • 1 garlic clove minced
  • 1/4 cup grated parmesan cheese plus extra for garnish
  • Kosher Salt
  • Freshly ground pepper
  • Step 1 Preheat oven at 375 Fahrenheit
  • Step 2 Slice Zucchini lengthwise season with salt and place in the oven on a rimmed sheet pan, for about 10 minutes. Set aside.
  • Step 3 For the red sauce:
  • Step 4 Heat olive oil on a pot and add onion, bell pepper, minced garlic, dried oregano, and ground turkey. Season with salt and pepper. Allow cooking for 3-5 minutes.
  • Step 5 Add tomato sauce, and let it simmer for about 10 minutes on low-medium heat. Adjust seasoning and set aside.
  • Step 6 For the white sauce:
  • Step 7 Heat heavy cream on a pot. Add minced garlic and parsley. Season with salt and pepper.
  • Step 8 Let it simmer on low-medium heat for about 10 minutes.
  • Step 9 Finish with parm. Adjust seasoning and set aside.
  • Step 10 Assemble the lasagna on a baking dish and garnish with parsley and parmesan.
  • Step 11 Place in the oven for about 45 minutes uncovered.
  • Step 12 Let it rest for a few minutes before serving.
